Harvest Happiness: Fresh Recipes from My Garden!

Hi Everyone! 🌞

Life in Tasmania has been an amazing journey. After leaving my city job, I’m now living in a caravan while designing my dream tiny home. 🌿🚐 My goal is to live as sustainably as possible, with veggie gardens, solar power, and all the joys of off-grid living.

Today, I’m excited to share some delicious recipes straight from my garden! 🍅🥕🌽 Growing my own food has been so rewarding — fresher, tastier, and a huge step towards sustainability. There’s something magical about plucking fresh ingredients from the earth and turning them into a meal that nourishes both body and soul.

Here’s one of my favorite meals: a fresh garden salad paired with homemade herb bread. This combo is perfect for lunch or a light dinner, especially when you’re looking for something healthy and refreshing.

Fresh Garden Salad

Ingredients:

  • Mixed greens (lettuce, spinach, rocket)

  • Cherry tomatoes

  • Cucumbers

  • Carrots

  • Radishes

  • Fresh herbs (basil, parsley, mint)

  • Olive oil

  • Lemon juice

  • Salt & pepper

Instructions:

  1. Wash and chop the veggies. I love the vibrant colours that come from using a variety of greens and other produce.

  2. Toss them in a bowl, mixing and matching as you like.

  3. Drizzle with olive oil and lemon juice — this dressing is simple yet elevates the flavours beautifully.

  4. Season with salt and pepper to taste. Enjoy the crispness and freshness of every bite!

Homemade Herb Bread

Ingredients:

  • 3 cups flour

  • 2¼ tsp yeast

  • 1 tsp sugar

  • 1 tsp salt

  • 1 tbsp chopped fresh herbs (rosemary, thyme, oregano)

  • 1 cup warm water

  • 2 tbsp olive oil

Instructions:

  1. Mix flour, yeast, sugar, salt, and herbs in a bowl. The aroma of fresh herbs is so inviting!

  2. Add warm water and olive oil, forming a dough. Don’t worry if it seems sticky at first; it’ll come together.

  3. Knead for 8-10 minutes, letting the dough work its magic. It’s a great way to relieve stress!

  4. Let the dough rise for 1 hour in a warm spot until it doubles in size.

  5. Shape it into a loaf, let it rise for another 30 minutes, then bake at 375°F (190°C) for 25-30 minutes.

  6. Cool, slice, and enjoy the delicious aroma wafting through your home!
